Since I recommended caramel popcorn with almonds to E for a tasty, classy and cheap Christmas gift for co-workers, I decided maybe I should post the recipe for everyone. Again, it's from my MIL's family (like just about every tasty recipe I have).
Caramel Popcorn with Almonds
1 c butter
2 c brown sugar
1/2 c light corn syrup
1 tsp salt
1 tsp baking soda
1 tsp vanilla
10-12 c popped white popcorn
almonds (not sure how much - maybe 1 c?)
Melt margarine or butter. Stir in sugar, syrup and salt. Bring to a boil, stirring constantly. Remove from heat and add vanilla and baking soda. Pour over popcorn and stir very well. Bake for 30 minutes at 250, stirring every 10 minutes. Spread over wax paper to cool.
